Tony begun his career in racing as an apprentice jockey for Colin Hayes before moving into the training side of the Hayes stable as the foreman at Lindsay Park in 1982. At Lindsay Park he was held in high regard and was appointed head trainer for the operation in 2001, a role he held until 2005 when David Hayes returned from a training stint in Hong Kong.

During this period, McEvoy won four Adelaide trainers' premierships and one in Melbourne and also took out Group 1 wins including Cox Plate winner Fields of Omagh in 2003.

In 2011 Tony, with the help of friend and business man Wayne Mitchell, acquired the Lindsay Park property at Angaston forming the McEvoy Mitchell stable. Since then Tony has become one of Australia's leading trainers with multiple Group 1 winners and training premierships including the 2017/18 South Australian Metropolitan Trainers Premiership.

In September 2019 Tony entered a training partnership with his son Calvin - who worked for the Hayes family’s Lindsay Park after completing year 12 in Tanunda and spent 16 months in England back in 2015 before returning to SA.
